Abstract:
The research presented in this article consisted in obtaining of polycomponent extracts from spirulina biomass and their use as a protective agent against osmotic and thermal shocks in the freeze-drying process of yeast strains. After one year of storage in a lyophilized state, the influence of the bioactive extracts from spirulina on the biochemical indices, of which the content of proteins and carbohydrates, in the yeast biomass, was established.
