Abstract:
Nut growing is a strategic branch in the agriculture of the Republic of Moldova. The importance of walnut cultivation (Juglans Regia L) is determined by the nutritional and energetic value of walnuts, which derives from their unique composition with certain nutrients and phytocompounds responsible for the many beneficial effects of their consumption on the human body. Walnut core and oil present products of a complex composition, contain lipids, proteins, carbohydrates as well as mineral substances, vitamins, biologically active compounds with relevant antioxidant activity. In the work it is attested the examination of the variability of the composition of three varieties of walnuts grown on the territory of the republic; determination of the sensory characteristics of the walnut core, extracted from the walnuts selected for analysis, qualitative capitalization of the oil stored from the walnut core according to the physico-chemical parameters and assessing the quality of stored oils.
